who am i? what are we doing here?
more, please is written by Rachel Mansfield aka myself! i am be no means a chef or professional fancy recipe creator but i think that has been the key to growing my food content site over the last decade. my community knows that if i can make something, so can you. i have been sharing recipes on my website since 2015 and when i am truly someone who loves to cook and appreciates a delicious home cooked meal. but i am also not someone who cooks 7 days a week. we do takeout or eat out 2-3x (typically on weekends) and by we i mean my husband and my 3 (adorable but crazy) kids.
my recipes are lots of sheet pan meals, one pot recipes, skillet meals and they don’t require fancy kitchen equipment or tools. my dishes don’t take a lot of time, they only need a few ingredients and they’re not supposed to be fancy date night meals (although they can be).
but you’re not here for the recipes because that is what is on my website. you are here for more than that (more, please - duh). this is where i get detailed and specific. how exactly i meal plan for the week, what is in my fridge and pantry, what is on my grocery list and my tips and tricks i have learned along the way. especially when it comes to saving $$$ on groceries.
i am also the co-founder of a vc fund, grt sht ventures, where we invest in brands that are making our lives healthier in someway. and most recently i am the CEO and co-founder of cadootz - the next generation kid’s snacking platform.
